Not so unhealthy chocolate chip cookies

image2 (6)So, I have two options for this recipe. I have “much healthier than a standard cookie” and “pretty damn healthy, all things considered.” I’ll give you the healthier one first, and then you can see the original-ish recipe.

I sought to make a yummy, healthy cookie that had that great chewy taste of chocolate and vanilla and molasses, because though there is a time to have ooey, gooey, yummy cookies, there is ALSO a time to have a yummy, healthy treat that you can actually stop eating.

Ingredients

1/2 cup coconut oil (room temp and solid)image1 (8)

2T brown sugar

1/2 cup plain rice milk

1 tablespoon vanilla extract

2 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 cup vegan, soy free chocolate chips (we like Guitlard semi sweet, but if you do not need to be vegan soy free, go for 80%+ cocoa chocolate chips to reduce your sugar)

Instructions

  • Preheat oven to 350 degrees
  • Cream together the coconut oil, brown sugar, and vanilla
  • In a separate bowl mix the flour, baking soda, baking powder, and salt
  • Combine the wet & dry ingredients
  • Add in the rice milk slowly, stop as soon as your dough can be pressed into a soft dough. It will be crumbly like a biscuit dough (SHHH because it technically is a biscuit SHHH) but should hold together when pressed
  • Fold in the chocolate morsels & any other mix-ins of your choosing
  • Roll into Tbsp sized balls & place them on a cookie sheet lined with parchment paper then flatten them out a bit with your palm.
  • Bake for 7-9 minutes (I did 8 which was perfect)Note: These do NOT refrigerate well as a solid dough.

Alternative ingredients

1/3 cup plain rice milk

1 tablespoon vanilla extract

2 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 cup vegan, soy free chocolate chips (we like Guitlard semi sweet)

Notes: In this one, you can mix all wet together and then add in all of the dry. You don’t need to add in the milk separately.
